Hi Friends ! Welcome to my journey of eggless cake making...

You may be wondering about my curious penchant for "Eggless" cakes. I happen to be a staunch vegetarian, which implies that eggs and animal related products get crossed out from my daily cuisine. That does limit my choice of yummy desserts but it did set my mind ticking on looking out for  an egg substitute. Our move to Singapore 5 years back did pose a challenge as eggless cakes seem to be quite an oddity! An enquiry on eggless cakes used to get me a lot of curious glances. By the time my son's third birthday approached, I was beginning to get desperate for an eggless option. And as the cliché goes...necessity is the mother of all invention....! Armed with encouraging words from my family, I embarked upon my journey to baking cakes without eggs. My first experiment with an eggless cake was quite a success (if I may say so myself!). My family and friends goaded me further to try out more options and before I knew, it was a beginning of a new passion for me.

As all of you connoisseurs would agree ,the biggest challenge in baking cakes using various egg substitutes is how do you replicate the taste and texture of cakes that contain eggs?.As I gradually learnt about the various aspects of baking frosting and decorating; facts which evolved were that Gelatin -a stabiliser used in whipped cream frosting is obtained from animal bones.The other stabilisers and thickening agents such as Meringue Powder and Creme Royale contain Egg Whites which are used for making decorative designs and flowers. So nicely frosted eggless cake doesn't guarantee that it is free from the above mentioned products. If you  start  to unravel  the ingredients then the tasty eggless cake you consume might create some bitter taste for those who are relishing it purely for its "Vegetarian Face value".

These facts made me work harder on the frosting process and experiment with different vegetarian stabilisers without compromising on the  taste and texture of the cakes. This has given me immense satisfaction and confidence of sharing it with you.
